Ukrainian Smoky Pilaf
A hearty Ukrainian dish with smoky pilaf and roasted vegetables.

- β1/2 cup roasted sunflower seeds
- β1 tsp smoked paprika
- β2 tbsp olive oil
- β1 medium onionchopped
- β1 medium carrotchopped
- β2 stalks celerychopped
- β1 tsp dried thyme
- βto taste salt and pepper

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion, carrot, and celery and cook until the vegetables are tender.
