Mexican Cracker Quesadilla
A twist on traditional quesadillas using graham crackers for a crunchy twist. Perfect for a quick snack.
Ingredients
- β6-8 Graham Crackers
- β8 oz Mexican Cheese Blend
- β2 Roasted Peppers
- β1 tsp Smoked Paprika
- β Salt and Pepper
Instructions

Preheat a large skillet over medium heat.

Place a graham cracker in the skillet and sprinkle shredded cheese on half of the cracker.

Fold the cracker in half to enclose the cheese and cook for 2-3 minutes or until the cheese is melted and the cracker is crispy.

Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy.

Repeat with remaining graham crackers and cheese.

Cut the quesadillas into wedges and serve with roasted peppers and smoked paprika for garnish.
