Thai Chicken Satay
A classic Thai street food dish featuring marinated chicken skewers grilled to perfection. Serve with peanut sauce for a delicious snack or appetizer.
Ingredients
- β1 pound chicken breastcut into 1-inch pieces
- β2 tablespoons flaxseed oilfor marinade
- β2 tablespoons fish saucefor marinade
- β1 teaspoon portuguese red pepper flakesfor marinade
- β2 cloves roasted garlicminced
- β10-12 skewersfor grilling
- β2 tablespoons palm sugarfor peanut sauce

1. In a blender or food processor, combine flaxseed oil, fish sauce, and portuguese red pepper flakes. Blend until smooth.

2. Add minced roasted garlic and blend until well combined.

3. In a large bowl, combine chicken pieces and marinade. Mix well to coat.

4. Cover bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

6. Thread marinated chicken onto skewers, leaving a small space between each piece.
