Kenyan Vermicelli Noodle Dish
A flavorful and spicy Kenyan dish made with vermicelli noodles, roasted vegetables, and gooey cheese. Serve hot and enjoy!
Ingredients
- ●250g Vermicelli noodles
- ●200g Roasted vegetables (carrots, zucchini, bell peppers)
- ●100g Gooey cheese (mozzarella or cheddar)
- ●1 medium Onion
- ●2 cloves Garlic
- ●2 tbsp Tomato paste
- ●2 tbsp Olive oil
- ●1 tsp Kenyan spice mix (or substitute with curry powder)
- ●to taste Salt and pepper

Cook the vermicelli noodles according to package instructions. Drain and set aside.

Heat the olive oil in a large pan over medium heat.

Add the onion and garlic and sauté until softened.

Add the roasted vegetables and cook for 2-3 minutes.

Add the tomato paste and Kenyan spice mix. Stir well to combine.

Add the cooked noodles to the pan and stir to combine with the vegetable mixture.

Transfer the noodle mixture to a baking dish.

Top with gooey cheese and bake in a preheated oven at 375°F (190°C) for 10-15 minutes, or until the cheese is melted and bubbly.
