Ingredients

- β1 medium Roasted eggplantdiced
- β2 large Tomatodiced
- β1 cup Tart cherry tomatoeshalved
- β1/4 cup Cilantrochopped
- β2 tbsp Thai red chili sauceadjust to taste
- β1 tsp Coconut oilfor brushing bread
- β Saltto taste

1. Preheat the oven to 375Β°F (190Β°C).

2. Slice the French bread into 1-inch thick slices and toast until lightly browned.

3. In a large bowl, combine roasted eggplant, diced tomato, and halved cherry tomatoes.

4. In a small bowl, whisk together Thai red chili sauce and a pinch of salt.

5. Brush the toasted bread slices with coconut oil and top with the eggplant mixture.
