Roasted Vegetable Tagine
A flavorful and aromatic vegan tagine made with roasted vegetables, inspired by Middle Eastern cuisine.
Ingredients

- β2 large sweet potatoespeeled and chopped
- β1 large red bell pepperseeded and chopped
- β1 medium zucchinichopped
- β1 large onionchopped
- β1 tsp cuminground
- β1 tsp corianderground
- β1 tsp paprikasweet
- β2 tbsp olive oilfor roasting

Preheat the oven to 425Β°F (220Β°C).

Toss the chopped vegetables with olive oil, cumin, coriander, and paprika in a bowl.

Spread the vegetables in a single layer on a baking sheet and roast for 25 minutes.

While the vegetables are roasting, heat a large skillet over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the roasted vegetables to the skillet and stir to combine.

Season with salt and pepper to taste.
