Japanese Grilled Aubergine with Roasted Red Pepper Sauce

- β2 Baby auberginepreferably Japanese or American eggplant
- β1 Roasted red peppercanned in water, drained and chopped
- β1 tsp Ethiopian spices (berbere blend)or Japanese curry powder
- β2 tbsp Soy sauceor tamari for gluten-free option
- β1 tbsp Rice vinegaror apple cider vinegar
- β1 tsp Honeyoptional, for sweetness
- βto taste Salt

1. Preheat grill or grill pan to medium-high heat.

2. Cut the baby aubergine in half lengthwise and brush with a little oil.

3. Grill the aubergine for 3-4 minutes per side, or until tender and lightly charred.
