Classic British Lamb Roast
A traditional British-style lamb roast recipe, perfect for a special occasion. This recipe serves 4-6 people and is a hearty, flavorful dish.

- ●2 1/4 to 2 3/4 pounds Lamb Roast (2-3 pounds)ask your butcher for a bone-in leg of lamb

- ●2 teaspoons Salt
- ●1 teaspoon Black Pepper
- ●3 cloves Garlicminced
- ●2 sprigs Rosemaryfresh
- ●4-6 medium-sized Carrots
- ●2-3 large Potatoes
- ●1 large Onionchopped

Preheat oven to 325°F (160°C).

Rinse the lamb roast and pat it dry with paper towels.

Season the lamb with salt, black pepper, and garlic.

Heat the olive oil in a large skillet over medium-high heat. Sear the lamb until browned on all sides, about 2-3 minutes per side.

Transfer the lamb to a large roasting pan and add the rosemary sprigs.

Roast the lamb in the preheated oven for 20 minutes per pound, or until it reaches an internal temperature of 145°F (63°C).

While the lamb is roasting, toss the carrots and potatoes with a little bit of oil and season with salt and pepper.
