Slovakian Grape and Tomato Stew
A hearty stew originating from Slovakia, made with roasted grapes and tomatoes.
Ingredients
- β1 cup Roasted grapesany variety will do
- β2 medium Aromatic tomatoessuch as Roma or Plum
- β1/2 loaf Slovakian breador substitute with gluten-free bread
- β1 Bowlfor serving
- β2 tablespoons Olive oilfor cooking
- βto taste Saltfor seasoning
- βto taste Black pepperfor seasoning
- β1/4 cup Fresh parsleyfor garnish

1. Preheat the oven to 400Β°F (200Β°C).

2. Cut the top off the tomatoes and scoop out the insides.

3. Place the tomatoes on a baking sheet and drizzle with 1 tablespoon of olive oil.

4. Roast the tomatoes in the oven for 20-25 minutes, or until tender.

5. In a large saucepan, heat the remaining 1 tablespoon of olive oil over medium heat.

6. Add the roasted grapes and cook for 5-7 minutes, or until they start to soften.

7. Add the roasted tomatoes to the saucepan and stir to combine.

8. Season with salt and black pepper to taste.

9. Serve the stew hot, garnished with fresh parsley.

10. Serve with a slice of Slovakian bread on the side.
