Kenyan Goat Tagine
Richly spiced Kenyan goat tagine is a hearty and flavorful stew originating from East Africa.
Ingredients
- β1 pound Goat meatcut into 1-inch cubes
- β2 medium Onionschopped
- β3 cloves Garlicminced
- β2 inches Gingergrated
- β1 tablespoon Cuminground
- β1 tablespoon Corianderground
- β1/2 teaspoon Cayenne pepperground
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β2 cups Tomatoescanned or fresh

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the goat meat and cook until browned, about 5 minutes. Remove from heat and set aside.

Add the onions, garlic, and ginger to the pot and cook until the onions are translucent, about 5 minutes.

Add the cumin, coriander, cayenne pepper, salt, and black pepper to the pot and cook for 1 minute.

Add the browned goat meat back to the pot and stir to combine.

Add the tomatoes to the pot and stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the goat meat is tender.

Serve the tagine hot, garnished with fresh cilantro if desired.
