Egyptian Lamb Tagine
A traditional North African stew made with tender lamb, rich spices, and a sweet blend of dried fruits. This slow-cooked tagine is perfect for a cold winter's night.
Ingredients
- β1 1/2 pounds Lamb shoulder
- β2 medium Onion
- β4 cloves Garlic
- β2-inch piece Ginger
- β2 tablespoons Cumin
- β1 tablespoon Coriander
- β1 teaspoon Cinnamon
- β1 teaspoon Turmeric
- β1 teaspoon Paprika
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β2 tablespoons Olive oil
- β1 cup Dried apricots
- β1 cup Dried prunes
- β2 cups Chicken broth

Heat oil in the bottom of a large clay or ceramic tagine or Dutch oven over medium heat.

Add onion and cook until browned, about 5 minutes.

Add garlic, ginger, cumin, coriander, cinnamon, turmeric, paprika, salt, and black pepper; cook for 1 minute.

Add lamb and cook until browned on all sides, about 5 minutes.

Add apricots, prunes, and chicken broth; bring to a boil.

Cover and transfer to the oven; braise for 2 1/2 hours or until the lamb is tender.

Serve hot, garnished with fresh parsley or cilantro, if desired.
