Thai Poffertjes with Silky Coconut Sauce
A twist on traditional Thai street food, these bite-sized poffertjes are served with a rich and silky coconut sauce. Perfect as a snack or dessert.
Ingredients
- β1 can light coconut milk
- β1/2 cup rich coconut cream
- β1 tsp silky pandan extractoptional
- β1 tsp zanzibari spice blendavailable at most Asian markets
- β1 package poffertjes mixavailable at most Asian markets
- β1/2 cup vegan egg replacementsuch as flaxseed or chia seeds
- β1/4 cup coconut oil
- β2 tbsp maple syrup
- β2 tbsp lime juice

Combine coconut milk, coconut cream, pandan extract, and zanzibari spice blend in a saucepan and heat over low heat.

In a separate bowl, mix together poffertjes mix and vegan egg replacement.

Heat coconut oil in a non-stick pan and add a small amount of the poffertjes mix mixture to make a test poffertje.

Cook poffertjes for 2-3 minutes on each side, or until golden brown.

Serve poffertjes hot with the coconut sauce spooned over the top.

Dust with powdered sugar and garnish with fresh lime wedges, if desired.
