Beet and Northern Irish Cheese Gratin with Japanese Twist
A unique fusion of Japanese flavors with the richness of an Irish-inspired gratin, featuring roasted beets and northern Irish cheese.
Ingredients

- β1 block (about 8 oz) Northern Irish Cheese (such as Cashel Blue or Dunloe)
- β2 tablespoons Unsalted Butter
- β2 tablespoons All-purpose Flour
- β1/4 cup Sake (Japanese Rice Wine)
- β2 tablespoons Honey
- β1 sprig Fresh Thyme
- β Salt and Pepperto taste

Preheat the oven to 375Β°F (190Β°C).

Peel and slice the roasted beets into 1/4-inch thick rounds.

In a medium saucepan, melt the butter over medium heat.

Add the flour and whisk to combine, cooking for 1-2 minutes.

Slowly pour in the sake, whisking continuously, until the mixture thickens.

Remove from heat and stir in the honey and thyme.

Arrange a layer of beets in the bottom of a 9x13 inch baking dish.

Top with a layer of the sake mixture, followed by a sprinkle of cheese.

Repeat this process two more times, finishing with a layer of cheese on top.

Bake for 25-30 minutes, or until the top is golden brown and the cheese is melted.
