Broiled Shrimp with Poblano Mole
A rich and flavorful Mexican dish featuring succulent shrimp smothered in a spicy poblano mole sauce.
Ingredients

- β4 poblano peppersroasted and chopped

- β2 tbsp chocolate chips
- β2 chipotle peppers in adobominced
- β2 tbsp vegetable oil

Preheat broiler.

Season shrimp with salt, pepper, cumin, and ancho chili powder.

Heat 1 tablespoon oil in a skillet over medium-high heat.

Add shrimp and cook until pink, about 2-3 minutes per side.

Transfer shrimp to a broiler pan and broil until cooked through.

Meanwhile, heat remaining oil in the skillet over medium heat.
