Moroccan Tagine Stew
A rich and flavorful stew originating from Morocco, typically cooked in a clay pot. This version uses soya and bean to make it a vegetarian-friendly option.

- β1 cup, dried soyasoaked overnight
- β1 cup, dried beansoaked overnight
- β2 tablespoons tagineground spices
- β2 tablespoons olive oil
- β1 medium onionchopped
- β2 inches gingergrated
- β2 medium tomatochopped
- β4 cups water
- βto taste salt
- βto taste black pepper

Instructions

Heat the oil in the bottom of a clay pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the ginger and cook for 1 minute.

Add the soya, bean, tagine, salt, and pepper. Stir to combine.
