Roasted Mexican Stuffed Peppers

- β2 roasted chilesdiced
- β1 cup rellenosdiced
- β1 cup broccolisteamed and chopped
- β1 medium oniondiced
- β3 cloves garlicminced
- β1 tsp cuminground
- β1/2 cup cheddar cheeseshredded
- β salt
- β pepper

Instructions

Preheat oven to 375Β°F (190Β°C).

Cut the tops off the bell peppers and remove seeds and membranes.

In a pan, heat 2 tbsp of oil over medium heat. Add onion and cook until softened.

Add roasted chiles, rellenos, broccoli, cumin, salt, and pepper. Cook for 5 minutes.

Stuff each bell pepper with the mixture and top with cheddar cheese.
