Rich Argentinian Frittata
A hearty, South American-inspired egg dish packed with roasted courgettes and rich flavor. Perfect for brunch or breakfast.
Ingredients
- β6 eggs Rich Argentinian Frittata
- β1 medium courgette, diced Roasted Courgettes
- β1/2 cup, shredded Cheddar Cheese
- β1 small, diced Onion
- β2 cloves, minced Garlic
- β1/4 teaspoon Chili Flakes
- β2 tablespoons Olive Oil
- βto taste Salt and Pepper

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat.

Add the diced onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for a further minute.

Add the diced courgette and cook until tender, about 5 minutes.

In a large bowl, whisk together the eggs, chili flakes, salt, and pepper.

Pour the egg mixture over the cooked courgette mixture in the skillet.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set.

Remove the skillet from the oven and sprinkle with shredded cheddar cheese.

Return the skillet to the oven and bake for a further 2-3 minutes, or until the cheese is melted and golden brown.
