Classic American Cornbread Casserole
A comforting twist on traditional cornbread, this casserole is perfect for a weeknight dinner. The rich flavors of roasted corn and savory cornbread come together in a harmonious blend.
Ingredients
- β1 cup Roasted cornfresh or frozen
- β1 package Cornbread mix8.5 oz
- β2 Large eggsroom temperature
- β1/2 cup Milkwhole or 2%
- β1 cup Shredded cheddar cheesedivided
- β1/4 cup Butter, melted
- β1/2 tsp Salt
- β1/4 tsp Black pepper

Preheat oven to 400Β°F (200Β°C).

In a large bowl, whisk together cornbread mix, eggs, milk, and melted butter.

Stir in 1/2 cup of shredded cheddar cheese and 1 cup of roasted corn.

Pour mixture into a greased 9x13-inch baking dish.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Sprinkle remaining 1/2 cup of shredded cheddar cheese on top of the casserole and return to oven for an additional 2-3 minutes, or until cheese is melted and bubbly.
