Vietnamese Beef Curry
A rich and flavorful Vietnamese-inspired beef curry made with tender beef, fresh tomatoes, and aromatic spices.
Ingredients
- β1 pound (450g) beef brisket or chuck, cut into bite-sized pieces beef
- β2 tablespoons curry pastepreferably Vietnamese curry paste
- β1 can (14 oz/397g) full-fat coconut milk coconut milk
- β2 medium, diced tomatoes
- β2 tablespoons fish sauceoptional
- β1 tablespoon sugaroptional
- βto taste black pepper
- β2 tablespoons rice vinegaroptional
- β2 tablespoons oilvegetable or peanut oil
Instructions

Heat 1 tablespoon of oil in a large pan over medium-high heat. Add the beef and cook until browned, about 3-4 minutes.

Remove the beef from the pan and set aside.

Add the remaining 1 tablespoon of oil to the pan and reduce heat to medium.

Add the curry paste and cook, stirring constantly, for 1-2 minutes.

Add the coconut milk and bring the mixture to a simmer.

Return the beef to the pan and add the diced tomatoes, fish sauce, and sugar (if using).

Stir to combine and cook for an additional 5-7 minutes, or until the beef is cooked through and the sauce has thickened.

Season with black pepper and rice vinegar (if using).

Serve hot over steamed rice or noodles.
