Vietnamese Cured Fish Pilaf
A keto-friendly dish that combines the flavors of Vietnam with the comfort of pilaf. This recipe is perfect for a low-carb diet.
Ingredients
- β1 pound Rich Fish (such as Salmon)cut into 1-inch pieces
- β1/2 cup Red Vietnamese Cured Porkdiced
- β1 cup Pilafmade with cauliflower and coconut flour
- β2 tablespoons Fish Sauce
- β2 tablespoons Coconut Oil
- β1/4 cup Chopped Green Onionsfor garnish

Preheat oven to 400Β°F (200Β°C).

In a large skillet, heat coconut oil over medium-high heat.

Add fish pieces and cook until browned, about 3-4 minutes per side.

Transfer fish to a baking dish and bake for 8-10 minutes or until cooked through.

In the same skillet, add diced pork and cook until browned, about 3-4 minutes.
