Kenyan Vegetable Pasta
A flavorful and healthy pasta dish inspired by Kenyan cuisine, featuring a variety of colorful vegetables.
Ingredients
- β250g pasta
- β3 carrotspeeled and chopped
- β2 bell peppersseeded and chopped
- β1 onionschopped
- β2 tomatoeschopped
- β2 tbsp rich Kenyan rich sauce (see notes)
- β1 tbsp fish sauceoptional (omit for vegetarian)
Instructions

Bring a large pot of salted water to a boil and cook pasta according to package instructions.

In a large skillet, heat 1 tablespoon of oil over medium heat. Add onions and cook until softened, about 3-4 minutes.

Add chopped carrots and bell peppers to the skillet and cook, stirring occasionally, until tender, about 5 minutes.

Stir in chopped tomatoes and cook for an additional 2-3 minutes.

Add cooked pasta to the skillet and toss with the vegetable mixture.

Stir in Kenyan rich sauce and fish sauce (if using). Season with salt and pepper to taste.
