Jamaican Coconut Rice Pilaf
A flavorful and aromatic Jamaican-inspired rice pilaf dish infused with coconut and spices.
Ingredients

- ●1 cup Rich coconut milkfull-fat coconut milk
- ●1/4 cup Pilaf riceshort-grain rice for added texture
- ●1 tablespoon Jamaican jerk seasoningstore-bought or homemade
- ●2 tablespoons Olive oilfor sautéing
- ●1 medium Onionchopped
- ●2 cloves Garlicminced
- ●to taste Saltfor seasoning
- ●to taste Black pepperfor seasoning

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute, until fragrant.

Add the Carnaroli rice and cook for 1-2 minutes, until lightly toasted.

Add the pilaf rice, Jamaican jerk seasoning, salt, and black pepper. Cook for 1 minute.

Add the coconut milk and stir to combine.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
