Spanish Lasagna
A rich and savory lasagna dish inspired by Spanish cuisine, featuring a blend of grassy notes and melted cheese.
Ingredients
- ●8-10 sheets lasagna noodles
- ●1/4 cup grassy olive oilused for sautéing
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●1 cup ricotta cheeseused for the filling
- ●1 cup Parmesan cheeseused for the filling

Preheat the oven to 375°F (190°C).

Cook the lasagna noodles according to package instructions. Drain and set aside.

In a large skillet, sauté the chopped onion and minced garlic in grassy olive oil until softened.

In a large bowl, combine ricotta cheese and Parmesan cheese.

Spread a layer of the ricotta mixture on the bottom of a 9x13-inch baking dish. Arrange 4 lasagna noodles on top.

Spread half of the sautéed onion and garlic mixture on top of the noodles. Sprinkle with half of the ricotta mixture.

Repeat the layers, starting with the noodles, then the onion and garlic mixture, and finally the ricotta mixture.

Cover the baking dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
