Russian Frittata
A gluten-free, rich, and garlicky twist on the classic frittata recipe. Perfect for brunch or a quick dinner.
Ingredients

- ●2 cloves, minced garlic
- ●1/2 pound, sliced Russian sausagegluten-free
- ●1/4 cup chopped fresh dilloptional
- ●1/2 cup shredded cheddar cheeseoptional

Preheat oven to 375°F (190°C).

In a large skillet, heat 2 tablespoons of oil over medium heat. Add the sliced Russian sausage and cook until browned, about 5 minutes.

Remove the cooked sausage from the skillet with a slotted spoon and set aside.

In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.

In a large bowl, whisk together the eggs and a pinch of salt.

Add the cooked sausage, chopped fresh dill, and shredded cheddar cheese (if using) to the bowl with the eggs and stir to combine.

Pour the egg mixture over the cooked garlic in the skillet and cook until the edges start to set, about 2-3 minutes.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden brown.

Remove the skillet from the oven and let it cool for a few minutes.

Use a spatula to loosen the edges of the frittata from the skillet and slide it onto a plate.
