Uruguayan Cheese Empanadas
A traditional Uruguayan dish, these flaky empanadas are filled with rich, melted cheese, perfect as a snack or dinner.
Ingredients
- β2 1/4 cups All-purpose flour
- β1 cup Cold unsalted butter
- β1/2 cup Water
- β1 cup Grated cheese (Uruguayan or cheddar)
- β1 large Eggs
- β1/4 teaspoon Salt
- β1/4 teaspoon Black pepper

1. In a large mixing bowl, combine flour and salt.

2. Add cold butter to the flour mixture, and use a pastry blender to work it into the flour until the mixture resembles coarse crumbs.

3. Gradually add water to the mixture, stirring with a fork until the dough comes together in a ball.

4. Turn the dough out onto a lightly floured surface, and knead a few times until smooth.

5. Divide the dough into 8 equal pieces.

6. Roll out each piece of dough into a thin circle.

7. Place 1 tablespoon of grated cheese in the center of each dough circle.

8. Fold the dough over the cheese, and press the edges together to seal the empanada.

9. Use a fork to crimp the edges of the empanada.

10. Brush the tops of the empanadas with beaten egg, and sprinkle with a pinch of salt.

11. Preheat the oven to 375Β°F (190Β°C).

12. Place the empanadas on a baking sheet lined with parchment paper, and bake for 20-25 minutes, or until golden brown.
