Keto Polish Pierogi
A keto version of traditional Polish pierogi, made with rich, flaky dough and filled with a delicious pierogi-inspired filling.
Ingredients
- β2 cups almond flour Rich, Flaky Dough
- β1 cup shredded cheddar cheese Pierogi Filling1/4 cup chopped scallions
- β1 large egg EggBeaten
- β1/4 teaspoon Salt
- β1/4 teaspoon Black Pepper

In a large bowl, combine almond flour and salt.

Add beaten egg and mix until dough comes together.

Knead dough for 5 minutes until smooth.

Divide dough into 8 equal pieces.

Roll out each piece into a thin circle.

Place 1 tablespoon of pierogi filling in the center of each circle.

Fold dough over filling and press edges together to seal.

Heat a large skillet over medium-high heat.

Add pierogi and cook for 2-3 minutes on each side, until golden brown.
