Greek Chickpea Stew
A hearty and comforting Greek-inspired stew made with chickpeas, rich and dense ingredients, and a blend of aromatic spices.
Ingredients
- β1 can (14 oz) chickpeas
- β1 large red onion
- β1 large red bell pepper
- β14 oz canned diced tomatoes
- β1/4 cup feta cheese crumbles
- β2 tbsp olive oil
- β2 tbsp lemon juice
- β1 tsp oregano
- β1 tsp salt
- β1 tsp black pepper

Heat olive oil in a large pot over medium heat.

Add the chopped onion and bell pepper, cooking until tender, about 5 minutes.

Add the garlic and cook for 1 minute.

Stir in the canned diced tomatoes, chickpeas, oregano, salt, and pepper.

Bring the mixture to a simmer, then reduce heat to low.
