Midnight Lamb Braise
A rich and savory lamb braise with a crunchy texture, perfect for a cold evening.
Ingredients
- ●1 (1.5-2 kg) lamb shouldercut into 2-inch cubes
- ●1 large onionchopped
- ●3 cloves garlicminced
- ●2 medium carrotspeeled and chopped
- ●1 cup red winedry
- ●2 cups stockbeef or lamb
- ●2 tbsp tomato pasteconcentrated
- ●1 tsp herbsdried thyme and rosemary
- ●1 cup rich beef brothhomemade or store-bought

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Brown the lamb cubes on all sides, about 5 minutes.

Remove the lamb and set aside.

Add more oil if needed, then sauté the onion and garlic until softened, about 5 minutes.

Add the chopped carrots and cook for 5 minutes.

Add the red wine, stock, tomato paste, and herbs.

Return the lamb to the pot, cover, and transfer to the oven.

Braise the lamb at 300°F (150°C) for 2-1/2 to 3 hours, or until tender.

Let the lamb rest for 10 minutes before serving.

Skim the excess fat from the sauce and serve with the lamb.
