Spanish Masarepa Paella

Ingredients
- β2 cups Masarepapreferably day-old masarepa
- β2 tablespoons Vegetable oil
- β1 medium Oniondiced
- β2 cloves Garlicminced
- β2 cups Tomatodiced
- β1 (14 oz) can Artichoke heartsdrained and chopped
- β1 cup Frozen peasthawed

Instructions

Heat the oil in a large paella pan or skillet over medium-high heat.

Add the onion and garlic and cook until the onion is translucent.

Add the tomato and cook for 5 minutes.

Add the artichoke hearts, masarepa, and peas. Stir to combine.

Add 2 cups of water and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.

Uncover and cook for an additional 5 minutes, or until the liquid has been absorbed.

Serve hot, garnished with chopped fresh herbs if desired.
