Spanish Creamy Cheese Fritters
A delicious and crispy fritter filled with creamy Spanish cheese. Serve as a snack or dessert.
Ingredients
- β1 package (usually 20-24 sheets) filo doughthawed
- β8 ounces cream cheesesoftened
- β8 ounces ricotta cheesedrained
- β1/2 cup grated Manchego cheesedivided
- β1 large egg
- βto taste salt
- βto taste black pepper
- βfor brushing olive oil

Preheat the oven to 375Β°F (190Β°C).

Cut the filo dough into 4 equal pieces.

Butter a 9x13-inch baking dish.

Place one piece of filo dough in the bottom of the baking dish, brushing with some olive oil.

Mix the cream cheese, ricotta cheese, and 1/4 cup of the Manchego cheese in a bowl.

Spread half of the cheese mixture on top of the filo dough.

Repeat the process with the remaining filo dough, cheese mixture, and Manchego cheese.

Brush the top of the fritters with some olive oil.

Bake for 25-30 minutes, or until the top is golden brown.
