Saudi Arabian Lentil Stew

- β1 cup red lentils
- β1 medium onion
- β3 cloves garlic
- β2 tablespoons olive oil
- β2 tablespoons tomato paste
- β1 cup ricotta cheeserich and creamy sauce
- β1 teaspoon cuminarabic spice
- β1 teaspoon corianderarabic spice
- βto taste salt
- βto taste black pepper

Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic and cook until the onion is translucent.

Add the lentils, cumin, coriander, salt, and black pepper. Cook for 1 minute.

Add the tomato paste and cook for another minute.

Add 4 cups of water and bring to a boil.
