Montreal-Style Beef Poutine
A classic Canadian dish featuring slow-cooked beef, crispy fries, and rich cheese curds. Perfect for a cozy dinner.

- β3 large Russet potatoes
- β1 cup Cheese curds
- β1 tablespoon All-purpose flour
- β2 cups Canned beef broth
- βto taste Salt
- βto taste Pepper
- β2 tablespoons Canola oil
- β4 slices Bacon

1. Cut the beef into 1-inch cubes and season with salt and pepper.

2. In a large Dutch oven, heat 1 tablespoon of oil over medium heat. Sear the beef until browned on all sides, about 5 minutes.

3. Remove the beef from the pot and set aside. Add the remaining 1 tablespoon of oil to the pot.

4. Add the sliced bacon to the pot and cook until crispy, about 5 minutes. Remove the bacon from the pot and set aside.

5. Add the flour to the pot and cook for 1 minute, stirring constantly.

6. Gradually add the beef broth to the pot, whisking constantly to avoid lumps.

7. Return the beef to the pot and bring the mixture to a simmer.

8. Reduce the heat to low and cook, covered, for 2 1/2 hours, or until the beef is tender.

9. Meanwhile, peel the potatoes and cut them into 1/2-inch thick fries.

10. Heat a large skillet with about 1/2 inch of oil over medium-high heat. Fry the potatoes in batches until golden brown, about 3-4 minutes per batch.

11. Remove the fries from the oil and place on a paper towel-lined plate to drain excess oil.

12. To assemble the poutine, place a portion of fries in a bowl, top with a spoonful of the beef and gravy, and finish with a sprinkle of cheese curds.
