British Mushroom Risotto
A rich and creamy risotto with a mix of sautéed mushrooms and a hint of British seasoning. This Italian-inspired dish is a perfect comfort food.
Ingredients
- ●1 cup arborio riceshort-grain rice ideal for risotto
- ●1 cup mushroommix of button and cremini
- ●1 tsp british seasoningdried thyme and rosemary
- ●1/2 cup white winedry, such as pinot grigio
- ●4 cups vegetable brothlow sodium
- ●1/2 cup parmesan cheesegrated
- ●2 tbsp butterunsalted
- ●2 cloves garlicminced
Instructions

Heat butter in a large skillet over medium heat.

Add garlic and sauté for 1 minute.

Add mushrooms and cook until tender, about 3-4 minutes.

Add arborio rice and cook for 1-2 minutes, until lightly toasted.

Add white wine and cook until absorbed, about 2 minutes.

Add 1 cup of vegetable broth and cook, stirring constantly, until absorbed.

Repeat the process, adding the broth in 1 cup increments, until the rice is cooked and creamy, about 20-25 minutes.

Stir in parmesan cheese and british seasoning.
