Spring Roll Filling with Portuguese Egg Omelette

- β4 spring rollsany type of spring roll wrapper
- β1 onionchopped
- β2 cloves garlicminced
- β2 slices portuguese sausageoptional
- β saltto taste
- β pepperto taste
- β1 tablespoon vegetable oil

In a medium bowl, beat the eggs and set aside.

Heat a small pan over medium heat and cook the onion and garlic until softened.

Add the Portuguese sausage to the pan and cook until browned, breaking it up with a spoon as it cooks.

Pour the beaten eggs over the onion and sausage mixture and cook until the eggs are almost set.

Add salt and pepper to taste.

To assemble the spring rolls, lay a spring roll wrapper on a clean surface.

Place a tablespoon of the egg mixture in the center of the wrapper.

Brush the edges of the wrapper with water.

Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.
