Vietnamese Pho with Cabbage
A refreshing twist on the classic Vietnamese noodle soup, featuring a rugged cabbage slaw.
Ingredients
- β1 medium head, shredded white cabbage
- β1 medium, peeled and grated rugged (daikon) radish
- β1/4 cup, chopped vietnamese fresh herbs (such as basil, mint, cilantro)
- β1 package, 200g pho noodles
- β4 cups vegetable broth
- β2 tbsp soy sauce
- β2 tbsp lime juice
- β1 tsp honey
- β1 tsp salt
- β1/4 tsp black pepper
Instructions

Bring the vegetable broth to a boil in a large pot.

Reduce heat to a simmer and add soy sauce, lime juice, honey, salt, and black pepper. Stir to combine.

Cook the pho noodles according to the package instructions. Drain and set aside.

In a large bowl, combine the shredded cabbage and grated daikon radish.

Add the chopped fresh herbs to the bowl and toss to combine.

To assemble the pho, place a portion of noodles into a bowl, then add a portion of the cabbage slaw on top.

Ladle the hot broth over the noodles and slaw.
