Korean Lamb Noodle Salad
A refreshing and spicy salad made with lamb, Korean chili flakes, and cold noodles.
Ingredients
- β1/2 pound, thinly sliced lambpreferably cooked to medium-rare
- β8 oz cold noodlessuch as naengmyeon or somyeon
- β1 tablespoon Korean chili flakesor gochugaru
- β1 medium, thinly sliced cucumberrefreshing and crunchy
- β1 medium, peeled and grated carrotadds natural sweetness
- β1/4 cup, thinly sliced green onionsadds pungency
- β1/4 cup, chopped cilantroadds fresh flavor
- β2 tablespoons lime juiceadds brightness
- β1 tablespoon honeybalances sweetness

Cook the noodles according to package instructions.

In a large bowl, combine the cooked noodles, sliced lamb, cucumber, carrot, green onions, and cilantro.

In a small bowl, whisk together the lime juice, honey, and Korean chili flakes.

Pour the dressing over the noodle mixture and toss to combine.

Season with salt to taste.

Serve immediately, garnished with additional cilantro if desired.

Refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, sprinkle with toasted sesame seeds and chopped cilantro, if desired.
