Shrimp Noodle Salad with Citrus Vinaigrette
A refreshing, citrusy, and easy-to-make salad featuring Croatian-style noodles and succulent shrimp.
Ingredients
- β8 oz Croatian noodlessuch as homemade or store-bought noodles
- β1 pound Shrimppeeled and deveined
- β1/4 cup Fresh parsleychopped
- β1/4 cup Fresh dillchopped
- β2 tbsp Lemon juicefreshly squeezed
- β1 tbsp Olive oilextra virgin
- βto taste Saltflake salt
- βto taste Pepperfreshly ground
Instructions

Cook the Croatian noodles according to package instructions.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

Add the shrimp and cook until pink and fully cooked, about 2-3 minutes per side.

Remove the shrimp from the skillet and set aside.

In the same skillet, add the chopped parsley and dill, and cook for 1 minute.

In a large bowl, combine the cooked noodles, shrimp, parsley mixture, lemon juice, salt, and pepper.
