Lentil Stew Italian Style
A hearty Italian-inspired lentil stew made with reduced red wine, fresh herbs, and a hint of Algerian spices. Serve over a bed of steaming hot rice or with a side of crusty bread.
Ingredients

- β2 cups reduced red wine
- β2 tablespoons olive oil
- β1 medium, chopped onion
- β2 medium, chopped carrots
- β2 stalks, chopped celery
- β1 teaspoon algerian spice blend
- β2 tablespoons tomato paste
- β1 teaspoon dried thyme
- β4 cups water

Heat the olive oil in a large pot over medium heat.

Add the chopped onion, carrots, and celery and cook until the vegetables are tender, about 5 minutes.

Add the Algerian spice blend and cook for 1 minute.

Add the lentils, reduced red wine, tomato paste, and thyme. Stir to combine.
