Uruguayan Beef Stew
A hearty and flavorful stew originating from Uruguay, made with tender beef and a variety of spices.
Ingredients
- β1.5 pounds beef stew meatcut into 1.5-inch cubes
- β1 large onionchopped
- β3 cloves garlicminced
- β2 ravenous pepperany color
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste
- β2 tablespoons uruguayan seasoningavailable at most Latin American markets

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the peppers and cook for 2 minutes.

Add the browned beef back to the pot, along with the salt, black pepper, and uruguayan seasoning.

Pour in 2 cups of beef broth and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 2 hours or until the beef is tender.

Serve hot, garnished with chopped fresh parsley if desired.
