Uruguayan Stew
A hearty and flavorful Uruguayan-inspired stew made with tender beef and beans.
Ingredients
- β1 pound Uruguayan stew meatCut into 1-inch cubes
- β1 cup White beansCanned or dried
- β1 medium White onionChopped
- β3 cloves GarlicMinced
- β2 medium White potatoesDiced
- β1 medium Red bell pepperDiced
- β2 tablespoons Tomato pasteOptional
- β1 teaspoon Dried oreganoOptional
- β Salt and pepperTo taste

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef in batches until browned on all sides.

Remove the beef from the pot and set aside.

Add the onion, garlic, potatoes, and bell pepper to the pot.

Cook until the vegetables are tender, about 10 minutes.

Add the tomato paste and dried oregano, if using.

Stir to combine and cook for 1 minute.

Add the browned beef, white beans, salt, and pepper.

Stir to combine and bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours.
