Traditional Moroccan Mechoui
Mechoui is a slow-cooked lamb dish originating from Morocco, traditionally cooked in a hole in the ground. This recipe is a simplified version of the classic dish.
Ingredients
- β2 lbs Lamb shoulder
- β2 tbsp Olive oil
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 tbsp Moroccan spicesa mix of cumin, coriander, cinnamon, ginger
- β1 tsp Salt
- β1 tsp Black pepper

Preheat oven to 300Β°F (150Β°C).

Season the lamb shoulder with salt and black pepper.

Heat the olive oil in a large Dutch oven over medium-high heat.

Sear the lamb shoulder until browned on all sides.

Add the chopped onion and cook until softened.

Add the minced garlic and cook for an additional minute.

Add the Moroccan spices and cook for 1-2 minutes.

Transfer the Dutch oven to the preheated oven and cook for 2 1/2 to 3 hours.

Let the lamb rest for 10-15 minutes before slicing and serving.
