Keto Moroccan Stew
A hearty, one-pot dish featuring lentils, vegetables, and a blend of Moroccan spices. This stew is low in carbs, making it a great option for a keto diet.
Ingredients
- β1 cup (160g) Lentils
- β2 tablespoons Olive oil
- β1 medium (120g) Onion
- β3 cloves Garlic
- β1 teaspoon Cumin
- β1 teaspoon Paprika
- β1/2 teaspoon Cayenne pepper
- β2 tablespoons Tomato paste
- β2 cups (475ml) Bone broth
- β2 tablespoons Sliced sellou (Moroccan preserved lemon)

Heat the olive oil in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic, cumin, paprika, and cayenne pepper. Cook for 1 minute.

Add the lentils, tomato paste, and bone broth. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.
