Braised Cherry Tomato Stew
A hearty Italian-inspired stew made with tender cherry tomatoes and a rich braising liquid.
Ingredients
- β2 cups cherry tomatoeshalved
- β2 tbsp olive oilfor cooking
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup stewhomemade or store-bought
- βto taste salt
- βto taste pepper
- β1/4 cup fresh basilchopped

Heat the olive oil in a large Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the halved cherry tomatoes and cook for 2-3 minutes, until they start to release their juices.

Add the stew, salt, and pepper. Stir to combine.

Bring the stew to a simmer, then cover and transfer to the oven.

Braise the stew in a preheated oven at 300Β°F (150Β°C) for 20-25 minutes, or until the tomatoes are tender.

Stir in the chopped fresh basil.
