Classic Beef Stew
A hearty and comforting beef stew made with tender beef and vegetables in a rich broth.
Ingredients
- β 2 pounds beef stew meatcut into 1 1/2-inch cubes
- β 2 tablespoons olive oil
- β 1 large onionchopped
- β 3 cloves garlicminced
- β 2 carrotspeeled and chopped
- β 2 potatoespeeled and chopped
- β 1 cup beef broth
- β 1 teaspoon dried thyme
- β 1 bay leaf
- β salt and pepper

Heat the oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the broth, thyme, and bay leaf to the pot and stir to combine.

Return the beef to the pot and bring to a boil.

Cover the pot and transfer to the oven.
