Roasted Carrot Quesadilla
A flavorful and healthy twist on traditional quesadillas, featuring roasted carrots as the main filling.
Ingredients
- β2 Quesadillawhole wheat or flour tortilla
- β2 medium Carrotpeeled and chopped
- β2 tsp Olive oilfor roasting
- β1 tsp Cuminground
- βto taste Saltoptional
- βto taste Pepperoptional

1. Preheat the oven to 425Β°F (220Β°C).

2. Toss the chopped carrots with olive oil, cumin, salt, and pepper on a baking sheet.

3. Roast the carrots in the oven for 20-25 minutes, or until tender and lightly browned.

4. While the carrots are roasting, heat a large skillet over medium heat.

5. Place one of the tortillas in the skillet and sprinkle shredded cheese on half of the tortilla.

6. Once the cheese is melted, fold the tortilla in half to enclose the filling.

7. Cook for an additional 2-3 minutes, until the tortilla is crispy and the cheese is melted.

8. Flip the quesadilla and cook for an additional 2-3 minutes, until crispy and golden brown.

9. Repeat with the remaining tortilla and filling ingredients.

10. Cut the quesadillas into wedges and serve hot.
