Kenyan Grilled Mealie Cakes

- β2 cups cornmealstone-ground
- β1 cup water lukewarm
- β1 tsp saltoptional
- β1/4 tsp cayenne pepperoptional
- β1/2 cup chopped onionoptional
- β1/4 cup chopped cilantrooptional
- β2 tbsp coconut oilfor brushing
- β1 cup grilled mealfor garnish

Instructions

In a large bowl, combine cornmeal, salt, and cayenne pepper.

Add water and stir until the mixture forms a thick batter.

Add chopped onion and cilantro, if using.

Heat a non-stick skillet or grill over medium heat.

Using a spoon, drop small balls of the batter onto the skillet or grill.
