Vietnamese Banh Xeo
A crispy Vietnamese pancake filled with pork and served with fresh herbs. This dish is perfect for a quick and delicious meal.
Ingredients
- β1 cup Taro starch
- β1/2 cup Water
- β1/2 pound PorkGround pork
- β1/2 pound ShrimpPeeled and deveined
- β1 cup Bean sprouts
- β1/4 cup Fresh herbsThai basil and mint
- β1/4 cup Fried shallots
- β1/4 cup Coconut milk
- β2 tablespoons Fish sauce
- β1 tablespoon Soy sauce

In a large bowl, mix together the taro starch and water to form a batter.

Add the ground pork, shrimp, bean sprouts, and fresh herbs to the batter and mix well.

Heat a small non-stick pan over medium heat.

Add 1 tablespoon of oil to the pan and swirl it around.

Pour a small amount of the batter into the pan and tilt the pan to form a round shape.

Cook for 2-3 minutes or until the bottom is crispy and golden brown.

Flip the pancake and cook for another 2-3 minutes or until the other side is crispy and golden brown.

Serve the pancake with fried shallots, coconut milk, fish sauce, and soy sauce.
