Spicy Thai Tom Yum Soup
A classic Thai soup made with a flavorful broth, spicy from chili peppers and lemongrass, and sweet from the addition of tomatoes.
Ingredients

- β2 tbsp som tam (papaya salad sauce)
- β1 tsp tam (fish sauce)
- β1 quick (or regular) tomatoescherry tomatoes, halved
- β2 Thai chiliessliced
- β1 stalk lemongrassbruised
- β1/4 cup pomelojuice
- β4 fish balls (or tofu for vegetarian)
- β1/4 cup Thai basilchopped
- β2 tbsp vegetable oil

Heat oil in a large pot over medium heat.

Add the sliced chilies, lemongrass, and a pinch of salt. Cook, stirring occasionally, until fragrant (1-2 minutes).

Add the diced tomatoes, fish balls or tofu, and Thai basil. Cook, stirring occasionally, until the fish balls or tofu are cooked through (3-4 minutes).

Add the som tam and tam sauces. Stir to combine.

Pour in the pomelo juice and stir to combine.

Bring the mixture to a simmer and cook for 2-3 minutes.

Taste and adjust the seasoning as needed.

Serve the soup hot, garnished with additional Thai basil if desired.
