Spanish Chicken Paella
A classic Spanish dish made with chicken, rice, and a blend of spices. This recipe is easy to make and perfect for a weeknight dinner.
Ingredients

- β1 cup paella
- β2 tablespoons quick cooking oil
- β1 medium onion
- β2 cloves garlic
- β2 cups chicken broth
- β1 medium tomato
- β1/4 teaspoon saffron
- β1/4 teaspoon smoked paprika
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper

Heat the oil in a large cocotte over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Remove the chicken from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 3 minutes.

Add the paella to the pot and cook for 1-2 minutes.

Add the chicken broth, tomato, saffron, smoked paprika, salt, and black pepper to the pot.
