Smoky Jamaican Lentil Tagine

- β1 cup, rinsed and drained Red Lentils
- β1 medium, chopped Onionabout 2 cups
- β2 medium, chopped Carrotsabout 2 cups
- β2 tsp Tagine Spice Mixsee notes
- β1 tsp Smoky Jamaican Seasoningadjust to taste
- β2 tbsp Tomato Paste
- β4 cups Vegetable Brothgluten-free
- β2 cups Water
- β1 tsp Salt
- β1 cup, cooked Quick-cooking Brown Rice

Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion and carrots; cook, stirring occasionally, until tender, about 10 minutes.

Stir in tagine spice mix, smoky Jamaican seasoning and tomato paste; cook 1 minute.

Add lentils, broth, water and salt; bring to a boil.

Reduce heat to low; cover and simmer, stirring occasionally, until lentils are tender, about 30 minutes.
